Way back in 1966, the first K-BOB'S Steakhouse opened in Clovis, New Mexico, in the heart of cattle country.

The concept was simple. Day in and day out, serve hand-cut, mouth-watering Steaks, offer a farm fresh, made-from-scratch Salad Wagon™, and dish up the best Chicken Fried Steak in town.

In the 1990s and early 2000s, K-BOB'S took important steps to modernize the brand and menu offerings. Edward R. Tinsley III bought the restaurant chain in 1992 and breathed new life into the company. He built several new restaurants across New Mexico and Texas, and introduced horseshoe bars in the new restaurants, offering a full selection of beer, wine, and cocktails.

In 2015, Tinsley’s son, Edward R. Tinsley IV, and son-in-law, Morgan Booth, took responsibility for day-to-day operations. Since then, Edward and Morgan have focused on updating the brand for a new generation of diners, while preserving the traditions that have defined K-BOB’S for generations.

Today, the food is still made from scratch, the hospitality is still down-home, and the Salad Wagon™️ still offers over 50 fresh vegetables, fruits, pasta salads, and puddings. In recent years, K-BOB’S has added a few new made-from-scratch Comfort Food items and offers an atmosphere that feels as comfortable as sitting at your own kitchen table.

There aren’t many places these days that serve authentic, made-from-scratch lunch and dinner. We know how important and hard it is to find a place that serves fresh meats, vegetables, soups, and hot bread, lovingly prepared each morning. K-BOB’S has been doing just that for the last 50 years, and we take pride in our heritage. We have never wavered in our commitment to operate Scratch Kitchens in each of our restaurants.

Since our first restaurant opened in 1966, K-BOB'S has always believed in supporting locally owned and operated family ranches. Our beef today is still sourced right in our backyards, from ranches in Texas and New Mexico.

A K-BOB’S restaurant can be found in small and medium-sized towns across Texas and New Mexico. We count ourselves as integral members of the communities we serve — “Family, Community, School… then K-BOB’S”. We pride ourselves on being the gathering place for family dinners and special occasions; to feed our high school sports teams, and the crews fresh off the ranch, the rig, or the factory floor. We strive every day to serve great food at honest prices. That’s been our mission for the last 50 years and it will be for the next 50 years.
